
Sparassis
Choice edible when young; dense, cauliflower-like coral of overlapping, wavy lobes that are firm and cartilaginous; pale cream to buff when fresh, darkening with age; nutty, mushroomy aroma and taste.
Parasitic and saprotrophic at the base or roots of conifers—especially Scots pine, also spruce, cedar, larch; forms at the base of trunks or stumps in pine woodland and forest edges.
Requires thorough cleaning—pine needles, soil, and insects can lodge deep within folds; only young, fresh specimens are edible—old or yellowed ones become indigestible; must be cooked slowly or blanched to soften; some stored specimens may attract maggots.
